Cornmeal-Crusted Chicken with Jalapeno Popper Sauce

Cornmeal-Crusted Chicken with Jalapeno Popper Sauce
adapted from Krista’s Kitchen, who got it from Mommie Cooks

3 chicken breasts
1 egg, beaten
1 cup yellow cornmeal
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/2 teaspoon salt

3 slices of bacon, chopped
3 jalapenos, seeded and chopped
Salt and black pepper to taste
2 cloves garlic, minced
2 cups chicken broth
8 ounces cream cheese
3/4 cup shredded cheddar cheese

1. Fry bacon until crisp in a high-sided skillet. Remove to paper towel-lined plate.

2. Meanwhile, combine cornmeal, chili powder, cumin, and salt on a rimmed plate. Dip each chicken breast in egg, then in cornmeal mixture. Shallow-fry in vegetable oil in a large skillet until crisp and juices run clear. Remove from skillet, drain on paper towels, and keep warm.

3. Add jalapenos to the skillet you used for the bacon, season with salt and black pepper, and cook until softened. Add garlic and cook and stir for 30 seconds until fragrant. Stir in chicken broth, using a wooden spoon to deglaze the pan. Bring to a boil. Add cream cheese and stir until melted and smooth. Stir in shredded cheese and reserved bacon, stirring until the cheese in melted.

4. Serve chicken topped with (lots of) sauce.

Burp cloths

I made these burp cloths for my soon to be born granddaughter. I think they turned out pretty adorable.

My quilt

Irealized it has been a L-O-N-G time since I have blogged. I could not remember how to make a new post. I finally figured it out. I just thought that I would show all my many followers (3 and counting) the quilt that I made for my first grandchild.

My granddaughter Eliza is going to be born in January and I made her this quilt. I found the kit in with my mothers things after she passed away. She cross stitched the 'with love me blest' square and the flower beside it. I was able to finish the rest when I was staying with my Daddy after he had a pace-maker put in. I could never of cross stitched it at my house because I have 3 dogs and 2 cats who fight over my lap if I dare to sit down. The center square was left blank for personalization. I chose to embroider the first names of all the grandmothers going back 3 generations, as well as Eliza and her mother. I then quilted it on my machine. Hand quilting would of been nice, but I realized that it would never happen. The quilt was a lot of fun to make and I am pleased to finish one of my Mommy's projects.
